Vegan Cantaloupe Gaspacho

Try this refreshing summer recipe, serve chilled!


1 medium cantaloupe (peeled, seeded, chopped)
1 small cucumber (peeled, chopped)
2 tbsp. chopped red onion
2 tsp. kosher salt
1/2 cup extra virgin olive oil
black pepper and salt to season
fresh mint, to garnish


1. Puree the cantaloupe, cucumber, onion, salt, and 1/3 cup water.

2. Drizzle in the olive oil and the salt and pepper to taste.

3. Serve chilled, top with fresh mint.
