Tofu Burgers

1 pound tofu, firm, mashed, or crumbled
1/2 cup oatmeal
1/2 cup pulsed Special K Protein Plus
2 tablespoons onion powder
1 1/2 teaspoons parsley, chopped
1 teaspoon salt (optional)
1 teaspoon poultry seasoning (OR 1/2 teaspoon basil, 1/2 teaspoon oregano, 1/2 teaspoon garlic powder)
2 tablespoons olive oil


Mix first 8 ingredients together in a bowl. Shape into 8 burgers and brown in the oil. Serve over a salad or on a lettuce wrap.

Serves 3-4
