1. Preheat oven to 450 degrees F
2. Trim cauliflower and cut into bite sized florets
3. Place cauliflower on roasting dish. Drizzle with oil, salt, and pepper, and toss to coat.
4. Bake at 450F for ~20 minutes until slightly browned, mixing every 5 minutes.
5. Sprinkle with herbs and garlic and continue roasting for another 5 minutes.
6. Combine cauliflower and cheese in a bowl. Season with salt and pepper to taste.
