Horseradish-Crusted Beef Tenderloin


  • 2 tbsp of grated horseradish
  • extra virgin olive oil
  • 1 tsp Dijon mustard
  • 2 lbs of beef tenderloin
  • salt and pepper to taste


1. Preheat oven to 400 degrees F
2. Combine horseradish, olive oil, and Dijon mustard in a bowl.
3. Season tenderloin with salt and pepper. Coat tenderloin with horseradish and mustard mixture.
4. Roast tenderloin in the oven. Check doneness using a meat thermometer, about 35-40 minutes for medium-rare.
