Cinnamon Roasted Almonds


  • 1/2 teaspoon salt
  • 1 1/2 teaspoon cinnamon plus 1/2 teaspoon reserved
  • 2 cups raw almonds
  • 2 tablespoons vanilla extract


Preheat oven to 300 degrees F.

Line  a cookie sheet in aluminum foil or parchment paper.  Place almonds in a large bowl.  Stir in vanilla extract, cinnamon, and salt.  Spread the almonds in a single layer on the lined cookie sheet.  Bake at 350 degrees F for 15-18 minutes.  Remove from oven and allow to cool completely.  Dust with reserved 1/2 teaspoon cinnamon.  Store in a sealed container.

Almonds are a fantastic source of Omega-3 fatty acids, as well as a good source of fiber and vitamin E.  Combined with cinnamon, which contains anthrocyanins which can help improve capillary function, this tasty treat is good for you! Optional Modifications:

This simple and yummy recipe works well with walnuts and pecans as well.

Looking for something spicy instead of something sweet?  Skip the vanilla extract, use 1 tablespoon of oil instead, and add chili powder.
