Creamed Spinach with Greek Yogurt

You will need a medium non-stick or cast iron skillet, and a 2 quart baking dish.


  • 1 tablespoon heavy cream
  • 20 oz frozen spinach
  • 2 tablespoons olive oil
  • 1 medium sweet yellow onion, chopped
  • 3 cloves garlic, chopped
  • 1 cup fat free plain Greek yogurt
  • 1/4 teaspoon pepper
  • 2 tablespoons shredded parmesan cheese or fat free mozzarella


1. Thaw frozen spinach. Once spinach is thawed, drain it throughly by squeezing it in a colander (use a bowl to press the spinach down in the colander).

2. In a medium saucepan, over low heat, combine garlic, onion, and olive oil. Saute until browned, about 5 minutes.

3. Slowly stir in spinach, and cook through. Stir in the yogurt, pepper, and 1 tablespoon cheese. Remove from heat.

4. Place in medium baking dish. Drizzle cream and remaining cheese over the top. Bake at 350 degrees for 20 minutes. Mixture should be bubbly.
